Cilantro Lime Black Bean and Corn Cauliflower Rice
Cilantro Lime Black Bean and Corn Cauliflower Rice - an incredibly easy and flavorful side dish that is packed full of veggies and can be on your plate in 15 minutes or less! It combines cauliflower rice, black beans, corn, roasted red pepper, and sautéed onions for a delicious and perfect side dish. Only 115 calories per serving!
1/2roasted red bell pepperor raw bell pepper, diced
freshly chopped cilantro(optional, can substitute with parsley)
Instructions
Place a large, nonstick pan over medium heat with olive oil.*
Once heated, add the chopped onions and allow to sauté 2-3 minutes or until translucent.
Add the cauliflower rice, corn, black beans, and diced roasted red bell pepper.** Season with salt, pepper, and garlic powder. Stir to thoroughly combine. Sauté for 3-4 minutes.
Remove from heat and garnish with lime juice and freshly chopped cilantro (or parsley).
Notes
*Can substitute with coconut oil or butter.**You can find jarred roasted red bell pepper in the specialty section or pasta section at most grocery stories. But you can always substitute with diced raw bell pepper. Add it to the pan with the onion to cook it down a bit and not when you add the rest of the vegetables.
