The Ultimate Guacamole Breakfast Sandwich

The Ultimate Guacamole Breakfast Sandwich - piled high with baby spinach, turkey bacon, hummus, Greek Yogurt Spinach Guacamole, and oozing with runny yolks from two over-easy eggs. Not for the faint of heart, but for the hungry beast individuals out there.

Ingredients

  • 1 english muffin toasted
  • 1 slice thinred onion optional
  • 3-4 leaves of baby spinach
  • 1 tbsp your favorite hummus*
  • 2 large eggs cooked over-easy
  • 2 tbsp shredded cheddar cheese
  • 2 tbsp Greek Yogurt Spinach Guacamole
  • 1 strip turkey bacon cooked
  • Half of a jalapeño sliced, optional
  • Salt and pepper to taste
  • Dash of garlic powder and chili powder

Instructions

  • Place a nonstick pan or griddle over medium-heat. Once heated, spray with nonstick spray and cook your bacon.
  • Once one side of the bacon is cooked, flip it and add your egg(s).Season with salt, pepper, garlic powder, and chili powder (if desired). I prefer not to flip my over-easy cooked eggs. I allow them to cook and cover the egg with a small lid to ensure the egg cooks around the yolk, without fully cooking the yolk itself. Adding a spritz of water to the pan before covering with a lid helps the process.
  • While the bacon and eggs are cooking, prepare the guacamole, if desired, and toss the muffin into the toaster.
  • Once everything is cooked, start piling together those items.
