Honey Lime Fruit Salad

This Honey Lime Fruit Salad is the perfect salad to make for your next BBQ or gathering! Fresh fruit tossed in a delicious honey, lime and poppy seed dressing that tastest not only sweet, but citrusy. This salad comes together quickly and easily. Guaranteed to be a crowd-pleaser!

Ingredients

Fruit:

  • 2 mangoes, peeled and diced
  • 4 kiwis, peeled and sliced
  • 1 fresh pineapple, peeled and diced
  • 2 lbs fresh strawberries, stems removed, halved or quartered
  • 10 oz fresh blueberries

Honey Lime Poppy Seed Dressing:

  • 3 tbsp honey, more or less to taste *See notes below
  • 2 tbsp pineapple juice, or another citrus juice
  • 2 tbsp lime juice, or lemon juice
  • 1 1/2 tsp poppy seeds, optional, extra for garnishment

Instructions

  • Combine all washed and sliced fruits into a large mixing or serving bowl. Place into fridge to keep cool until ready to serve.
  • To a small measuring glass or bowl, combine ingredients for the dressing. Mix well. Pour dressing over fruit and toss to combine 30-45 minutes prior to serving.
  • Continue to toss before each serving to ensure the dressing, as well as juices/water released, are evenly mixed. The dressing and waters released from the fruits will start to settle at the bottom of the bowl.

Notes

 
Depending on how ripe the fruits are, you may need more or less honey. Taste test the fruit and add honey - to taste.
If you cannot find fresh pineapple, - substitute with canned pineapples (drained). Use the juice from the canned pineapple for the dressing, if desired.
This salad is best served fresh. You can prep the fruit salad a few hours before needed, but I recommend tossing the honey lime poppy seed dressing in just before serving. and continuing to toss the coat. 
The longer sliced fruit sits (especially in the dressing), the softer the fruits get and the more water is released. Continue to toss to coat. Leftovers are good for 1-2 days.
