Maple Roasted Carrots

Maple roasted carrots that are tender, sweet and roasted to perfection! Comes together quickly and easily, making for the perfect side dish for any occasion!

Ingredients

  • 2 lb baby carrots
  • 5 tbsp maple syrup, or honey
  • 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 3 tbsp olive oil
  • 1/2 tsp salt, more or less, to taste
  • 1/4 tsp black pepper, more or less, to taste

Garnishment (optional):

  • freshly chopped thyme
  • freshly chopped parlsey

Instructions

  • Preheat oven to 450 degrees F. Spray a baking sheet with nonstick cooking spray.
  • To a small bowl, combine the maple syrup, onion and garlic powder, thyme, olive oil, salt and pepper (season to taste). Mix well.
  • Add in the carrots and toss to thoroughly coat them. Place the carrots onto the prepared baking sheet. Pour any remaining maple syrup mixture over the top.
  • Bake for 20-25 minutes, or until fork tender, stirring at 10 minutes.
  • Serve warm. Garnish with freshly chopped thyme and parsley.
