Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil and lay two tortillas flat.
To each tortilla add: 1/4 cup refried beans, 1/16 tsp. onion powder (or a dash), 1/16 tsp. garlic powder (or a dash), salt & pepper, to taste, 2 tbsp. diced onion
Layer the second tortilla on top and add to each: 1/4 cup diced tomatoes, 1/4 cup extra sharp shredded cheddar cheese, 1/2 jalapeno pepper, sliced, 1/2 bell pepper, diced
Place the baking sheet into the oven and bake for 5-7 minutes, or until the cheese has melted. Remove from the oven and add the diced avocado, shredded lettuce, and greek yogurt drizzled over the tops of each.
