Ingredients

  • 2 cups fresh baby spinach
  • 2 medium avocados peeled and pitted
  • 1/2 cup 0% plain greek yogurt
  • 1/4 cup red onion chopped
  • 1 tbsp fresh lime juice
  • 2 cloves garlic minced
  • 2 tbsp Chopped cilantro or 2 tsp dried cilantro
  • 1/2 tsp. sea salt
  • Pinch of black pepper

Instructions

  • Place the baby spinach, avocados, yogurt, red onion, lime juice, garlic, salt, pepper, and cilantro into a blender or food processor.
  • Blend until it reaches a creamy consistency. If you need to, run a spatula along the outer edges of the container to full incorporate the seasonings.
  • Garnish with a combination of chopped tomatoes, red onion and cilantro (optional).
