Greek Yogurt Spinach Guacamole
Greek Yogurt Spinach Guacamole - this simple, healthy guacamole takes less than 5 minutes to make and will be an absolute hit at your next dinner party. You'll never buy store bought again!
Servings 1 1/4 cups
- 2 cups fresh baby spinach
- 2 medium avocados peeled and pitted
- 1/2 cup 0% plain greek yogurt
- 1/4 cup red onion chopped
- 1 tbsp fresh lime juice
- 2 cloves garlic minced
- 2 tbsp Chopped cilantro or 2 tsp dried cilantro
- 1/2 tsp. sea salt
- Pinch of black pepper
Place the baby spinach, avocados, yogurt, red onion, lime juice, garlic, salt, pepper, and cilantro into a blender or food processor.
Blend until it reaches a creamy consistency. If you need to, run a spatula along the outer edges of the container to full incorporate the seasonings.
Garnish with a combination of chopped tomatoes, red onion and cilantro (optional).
