Who doesn’t love pizza? Or Mexican food? I know I do. Of course I love anything that contains cheese and jalapeños, so I’m not too hard to please. This Mexican Pizza is a wonderful light and healthy meal, or appetizer, to satisfy your cravings, but not bring on the guilt!

It’s one of the easiest and quickest guilty pleasure meals that you can make and it’s very versatile. Use any kind of toppings you like if you don’t care for all of my crazy toppings and stuff some meat in there if you prefer some meat. Or consider if a #MeatFree meal!

  • 1/2 cup organic refried beans
  • 1/8 tsp. onion powder
  • 1/2 tsp. garlic powder
  • Salt & pepper to taste
  • 1/4 cup diced onion
  • 1/2 cup diced tomatoes
  • 1/2 cup extra sharp shredded cheddar cheese
  • 1 large jalapeno sliced
  • 1/2 bell pepper diced


  • 1/2 avocado diced
  • 1/2 cup shredded lettuce
  • 1 scallion chopped
  • 1/4 cup 0% plain greek yogurt


  1. Preheat oven to 350 degrees F. Line a baking sheet with aluminum foil and lay two tortillas flat.
  2. To each tortilla add: 1/4 cup refried beans, 1/16 tsp. onion powder (or a dash), 1/16 tsp. garlic powder (or a dash), salt & pepper, to taste, 2 tbsp. diced onion
  3. Layer the second tortilla on top and add to each: 1/4 cup diced tomatoes, 1/4 cup extra sharp shredded cheddar cheese, 1/2 jalapeno pepper, sliced, 1/2 bell pepper, diced
  4. Place the baking sheet into the oven and bake for 5-7 minutes, or until the cheese has melted. Remove from the oven and add the diced avocado, shredded lettuce, and greek yogurt drizzled over the tops of each.
