It never matters how well I eat or how much I have changed my diet over the last year and a half. Some cravings still pop up out of nowhere and unless I feed those cravings, I could end up running to the nearest drive-thru- devouring those spicy chicken nuggets from Wendy’s. And goodness knows, that’s never a good idea because who can eat just five? And who can resist the order of fries to go along with it? Or the chocolate frosty to dip your fries in? Don’t tell me you haven’t done it. If you haven’t, I do recommend it. Sounds like the strangest thing, but I promise you it’s not. Plus, there are a lot of stranger combinations out there. Whats yours??
I will warn you, these are for the stronger taste buds, as they are hot!
6 nuggets per serving
Nutrition Breakdown Per Serving:
Now that is how a chicken nugget should look! Like chicken! With real breading!
2 8oz. boneless, skinless chicken breasts
1 tbsp. crushed red pepper flakes
1 cup Ians Whole Wheat Panko Breadcrumbs
1 tsp. onion powder
1 tsp. garlic powder
Salt & pepper, to taste
1/3 cup Frank’s Red Hot Sauce
1 large egg white
Preheat oven to 400 degrees F. In three separate bowls add the following:
1st bowl: Egg white
2nd bowl: Frank’s Red Hot Sauce, or hot sauce of choice
3rd bowl: ww panko breadcrumbs & remaining seasonings- I placed all into a food processor and processed down until it was a bit of a finer texture, as Ian’s breadcrumbs are a bit crunchy and thick.
Rinse each chicken breast and pat dry. Slice each chicken breast in half and then each slice into cubes, equally 24 cubes of chicken.
Dip each cube of chicken into the egg white, followed by the hot sauce, and then the breadcrumb mixture. Toss the crumbs to coat the chicken. You may need to press the breadcrumb mixture into the nugget to get a good coating.
Spray a baking sheet with non-stick spray and lay each nugget flat onto the tray. Spray a light mist of the non-stick cooking spray over the nuggets. I use Spectrum’s Canola Spray Oil.
Place the chicken nuggets into the oven and allow them to bake for 20-23 minutes or until they are thoroughly cooked, checking at 20 minutes. Allow them to cool slightly before handling and serving with your favorite dipping sauce! I absolutely love Annie’s Natural Organic Honey Mustard!
