If you’re looking for a healthy alternative to the infamous mayonnaise laden chicken/tuna salad sandwiches- then you have come to the right place!
I grew up putting mayonnaise on my sandwich. If my sandwich didn’t have it- then it just wasn’t the same. As I have changed my eating habits in the last year, I have learned to either live without these types of things or find a healthier alternative. If you’ve been following me for awhile, you know that I am all about the alternatives! I prefer not to deprive myself, but to find a way to enjoy what I once did.
Thus- I bring you a healthy, yet delicious Skinny Chicken Salad. Now, it does not fully replace the mayonnaise if that’s what you’re craving. But it certainly comes close.
Nutrition Breakdown Per Serving:
with Ezekiel Sesame Bread, Tomato, Baby Spinach, & Broccoli Sprouts:
What you will need:
2 tbsp. diced yellow squash
2 tbsp. diced celery
1 tbsp. diced yellow onion
1/8 Gala apple, or choice, diced
2 oz. boneless, skinless chicken breast, cooked & diced
1/2 tsp. dijon mustard
2 tbsp. 0% plain Greek yogurt (Fage)
Salt, to taste
1/8 tsp. paprika
Dice the squash, celery, onion, apple, and chicken. Combine into a mixing bowl.
To a small mixing bowl combine yogurt, dijon mustard, and seasonings. Stir well. Add the yogurt mixture to the diced mixture, mix thoroughly.
I served this with:
2 slices Ezekiel Sesame Bread
2 slices tomato
1/2 cup baby spinach
1/2 cup broccoli sprouts
