Breakdown Per Serving:
(For chicken, pesto, & pine nuts*)
What you will need:
1 4 oz. boneless, skinless chicken breast
1 tbsp. pesto sauce, divided
Salt & pepper, to taste
1 tbsp. pine nuts
2 tbsp. feta cheese, divided
4 1/4 in. tomato slices, optional
Greens: spinach, lettuce, romaine- your choice
2 Buns, of choice
Place a pan over medium heat. Slice the chicken breast down the middle, into two thin slices and season with salt & pepper, to taste. Scoop 1/2 tablespoon of pesto sauce onto each and rub the sauce into the chicken on both sides. Spray the pan with non-stick cooking spray and place each chicken breast halve onto the pan and cover. Allow to cook 3-4 minutes, flip, and cook an additional 3-4 minutes, or until each slice is cooked through.
Remove the chicken from the pan and add the pine nuts, stirring consistently for 2 minutes, or until they have turned a golden brown. Remove from heat and layer your sandwich with remaining items, or toppings of your choice. Enjoy!
