The best concoctions come to me while I am trying to fall asleep or have already fallen asleep. I am always thinking of what I can make for breakfast the next morning. After breakfast – it’s thoughts of lunch and the same for dinner. I am a foodie lover, so this should not come as much of a surprise.
Neither should the fact that this concoction involves peanut butter. My number one love!
What you will need:
2 slices whe wheat/grain toast, or choice
1/4 avocado, mashed
1/4 cup 0% plain Greek yogurt
2 tbsp. PB2 + 1- 1 1/2 tbsp. water, mixed, or 1 tbsp. of regular peanut butter
Stevia, or sweetener of choice, to taste
1/8 tsp. vanilla extract
Dash of cinnamon
Toss your bread into your toaster. While you’re waiting, mash the avocado in a small bowl. In a second bowl – combine yogurt, extract, sweetener, & prepared PB2. Mix well. Spread the avocado mash over the toast, followed by the yogurt mixture. Sprinkle ground cinnamon over the top, to taste. Enjoy!
