If you’ve got the crazy schedule and to-do list like I do, breakfast is usually a meal that needs to be something that you can grab as you are running out the door. I have a sweet tooth for two things- cookies and cakes. Preferably cakes, but that’s not particularly a breakfast food! 😉
It’s easy to make a terrible decision in the morning when you’re rushed, but if you plan ahead and prep some healthy & convenient alternatives you can avoid that!
I love to whip up many variations of banana-oat cookies. The possibilities with what you can add to these are endless. Don’t feel like you have to stop with my ingredients. If you’d like to add raisins, craisins, walnuts, or pecans- go right ahead! These are super easy to make and perfect for those grab and go moments!
Recipe makes 10 large cookies. These are breakfast cookies and I consider it to be a meal, so I make them bigger than a normal cookie. But if you would like to split the serving size in half and make into 20 smaller cookies- you can!

What you will need:
2 ripe bananas
2 tbsp. coconut oil
2 large egg whites
1 tsp. vanilla extract
1/4 cup PB2 + 3 tbsp. water, mixed
1/2 cup sweetener, more or less as most sweeteners are different (I used Stevia in the Raw)
1 tsp. baking soda
2 tbsp. flax meal
1 cup oats
1 cup whole wheat pastry flour
1/4 cup unsweetened shredded coconut
1/4 cup cacao nibs, or chocolate chips
1 tsp. cinnamon
Preheat oven to 350 degrees F and coat a cookie sheet with non-stick spray.
In a large mixing bowl combine the bananas, coconut oil, egg whites, and vanilla extract. Thoroughly mash the bananas and mix well. In a separate bowl combine all dry ingredients, saving the coconut and cacao nibs (or chocolate chips) for last. Combine the wet and dry ingredients and mix thoroughly.
Using a 1/4 cup measuring cup- spoon out 10 cookies. Using the measuring cup- press down on the cookies a bit to flatten them. You can also use the bottom of a spoon to smooth the top and edges out to give them a more rounded and flat look. Otherwise they will bake as they appear.
Place the cookie sheet into the oven to bake for 10-13 minutes. Enjoy!
