I woke up this morning with a major sweet tooth. I have been trying my best to get back to my eating regime since the holidays and it has been quite a struggle. A struggle only in the sense that I need to get my portions back under control. I am eating healthy, but even with eating healthy- your body only needs so much food in one day.
So this morning I had dessert for breakfast! You can’t go wrong with waffles. Sweet or savory- they are amazing! I have yet to have chicken and waffles. Maybe some day…
Today I decided to meet my sweet tooth cravings halfway with a Grilled Banana & Peanut Butter Waffle Sandwich. This was simply scrumptious! I won’t lie, I ate both and I am stuffed.
Nutrition Breakdown Per Sandwich:
1 Full Toffee Waffle, or your own
1/4 cup PB2 (powdered peanut butter), or PB of choice
1 medium banana, sliced
2 medium strawberries, sliced
1 tbsp. honey, divided
Non-stick cooking spray (I used Canola Oil Cooking Spray)
Spray a skillet with non-stick cooking spray and place over medium heat.
Cut the waffle into four triangles and spread prepared PB2, or regular peanut butter, over each one.
Drizzle honey over two of the triangles.
Cut each strawberry into thin slices and place on opposite waffles.
Slice banana and place on top of the strawberry slices.
Combine the two waffles and press down a bit firmly.
Carefully place each sandwich onto the skillet and allow to cook until the bottom starts to brown slightly and crisp up. With a spatula and your fingers, very carefully flip the waffle sandwich and allow the other side to cook until brown.
Remove from heat and enjoy!
