What do you do when you’re snowed in due to a 16 inch snowfall the day/evening before? You create & cook! My kitchen is one of my favorite places to be. (Aside from my bed!)
My husband has been having terribly unhealthy food cravings today, so I tried to meet his taste bud cravings halfway with a homemade burger, but minus the beef. And with black beans instead!
I find the key to a successful black bean burger is:
Once you have rinsed the beans- spread them out onto a paper towel & pat them dry very thoroughly.
Slightly mash the beans with a fork, leaving some chunks.
Using flour on the outside & cooking them in oil helps to crisp them on the outside.
The whole egg helps to hold it together – just as any regular burger patty.

What you will need:
1 15oz can black beans, drained & rinsed
1/2 yellow onion, finely chopped
1 tsp. minced garlic, 2 cloves
1 large egg
1/2 tsp. ground cumin
1/2 tsp. garlic powder
1 tsp. dried cilantro
1/4 tsp. smoked paprika
1 tsp. Sriracha
1/4 cup oat flour
1 tbsp. Better Body Foods Coconut Oil
1/4 cup NSA corn
Salt & pepper, to taste
1/2 Mission Avocado
1/2 tsp. lime juice
1/2 tsp. dried basil
1/2 tbsp. Feta cheese
In a mixing bowl, mash black beans slightly with a fork, leaving it a bit chunky. Chop the onions. Heat a skillet over medium heat. Spray with nonstick cooking spray and combine the onion and garlic. Cook until the onion is translucent. Remove from heat.
In a sma mixing bowl, whisk the egg just a little. Set aside.
Combine the seasonings & Sriracha with the black bean mixture & slowly mix in the egg. Fold in the onions & corn.
Place the skillet back over medium heat. Add the tablespoon of coconut oil & allow it to melt. Spread the oil over the pan with a brush.
Add the oat flour to a plate or bowl. Using a 1/4 cup measuring cup- scoop out 4 patties, form into balls and dip into the flour mixture on both sides. Place each patty into the hot skillet. Flip once each side has turned a golden & crisped.
Combine all ingredients into a small mixing bowl & mash thoroughly with a fork. Mix as much or as little as you prefer. You can leave it slightly chunky or thoroughly mixed as I did.
I served my burger over a Whole Grain English Muffin with: broccoli sprouts, diced tomatoes, 45 calorie slice of cheddar cheese, & plain Greek yogurt with a dash of dill weed.
