What you will need:
6 small gold potatoes, or 3 medium potatoes*
1/2 tbsp. olive oil
1/4 tsp. salt
Pepper, to taste (optional)
1/4 tsp. smoked paprika
1/4 tsp. garlic powder
1 tbsp. fresh parsley, chopped
2 tbsp. Parmesan cheese
Preheat oven to 450 degrees F. Line a baking sheet/cookie sheet with parchment paper. Place one to two baking racks on top of each baking sheet and spray with non-stock cooking spray.
Slice each potato in half and then into thirds, creating potato wedges. The thinner your fries- the quicker they will bake. The thicker they are, the longer they will take to bake. Place the fries into a Ziploc bag or a mixing bowl. Combine the olive oil and seasonings into a small mixing bowl and stir well. Pour the oil mixture into the bag or bowl and toss to coat well.
Place the fries onto the racks leaving a bit of room in between each one so that they can bake evenly. Bake for 20-25 minutes, flip the fries, and return to oven to bake for an additional 5-10 minutes. Time will be dependent on the thickness of your fries, so be sure to check the fries around 15-20 minutes. They should be crispy and softer in the center.
While the fries are baking, chop the parsley and toss with the parmesan cheese. Once the fries are baked, allow them to cool slightly. Place them into a bowl with the parsley and cheese and toss to coat. Enjoy!
